The craving for potato soup struck Wednesday night. But in searching for recipes I came across potato soup, baked potato soup, potato bisque, potato chowdah, cream of potato?? They’re all pretty similar, and truly I don’t see many differences between recipes. Can someone explain to me what I’m missing here??
So, in the end I took from all the recipes I saw, and with what was in my fridge I whipped together cream of potato sousquedah! It wasn’t as thick as I’d like, but tasty.
Potato Souquedah! (ish)
2-3 lbs redskin potatoes – 1/2 inch cubes (maybe have a mix of potatoes next time, hmmm idea!!)
2 onions chopped
4 pieces honey ham – chopped (was ok, but I’m going to use bacon next time)
2 cans chicken broth
2 cups milk
2 tbsp cornstarch
Salt and pepper to taste
4 tbsp butter
Melt butter, and sweat onions until translucent
Add ham and saute until fragrant
Add potatoes and cook for about 5 minutes
Add broth and bring to a boil for 15 minutes
Simmer for 15 minutes more
Mix cornstarch with 2 tbps water, add a small ladle of soup to cornstarch mixture, mix and add to soup
With a potato masher, gently mash soup (I mashed mine so I still had chunks)
Add milk and heat through
